The Golden Ratio
Just noble Italian flour and rich farm yolks — nothing artificial.
The Golden Fountain & Egg Yolks
Sift 100g '00' flour directly onto your wooden board and sculpt a wide well with tall, stable walls. Gently pour in 6 large vibrant farm egg yolks into the center.
Room Temperature Yolks
Cold yolks from the fridge tighten gluten prematurely and resist emulsifying. Bring eggs to room temperature 30 minutes before cracking for maximum silkiness.
Whisking the Golden Custard
Whisk the yolks gently with a fork without piercing the outer flour rim. Gradually draw in flour from the inner walls, transforming yolks into a thick, glossy custard.
Gentle Incorporation
Take your time incorporating the flour. Rushing leads to stubborn dry lumps instead of a homogeneous, velvety batter.
Bench Scraper Folding & Chopping
Once the custard is thick, switch to a metal bench scraper. Slice, fold, and chop the edges inward until the loose flour binds with the yolk mass into shaggy crumbles.
The Steel Scraper
A stainless steel bench scraper keeps your hands clean and lifts sticky dough fragments effortlessly off the raw wood without tearing delicate proteins.
Compacting the Golden Shag by Hand
Gather all the golden crumbs between both palms. Press and squeeze firmly against the wooden board until the crumbly mass compacts into a cohesive, warm dough ball.
Direct Downward Force
An all-yolk dough has less water than whole egg dough. Use body weight pressed directly downwards through your palms to fuse dry crumbs without adding extra moisture.
Heel-of-Palm Kneading & Gluten Mesh
Vigorously knead with the heel of your palm, pushing outward, rolling back, and turning 90 degrees. Work rhythmically for 8–10 minutes until the cylinder turns satiny and smooth.
Porosity of Raw Wood
Never knead egg pasta on marble or steel. Raw untreated pine or beech grabs the dough, creating essential micro-friction that stretches gluten sheets evenly.
Shaping the Ball & The Elasticity Test
Tuck the dough into a taut, flawless golden sphere. Press a clean thumb firmly into the crown: when the indentation springs back gently, wrap in cling film for a 30-minute rest.
The 30-Minute Gluten Nap
Never roll unrested dough! 30 minutes sealed at room temperature lets starches hydrate and gluten relax, allowing you to roll paper-thin sheets without rubbery shrink-back.
