The 50% Hydration Ratio
Pure Southern Italian heritage: golden durum semolina rimacinata, warm water, sea salt, and extra virgin olive oil.
Flour Mound & Bowl Well Impression
Sift 200g of golden semolina rimacinata directly onto your raw wooden pasta board. Take the round base of a glass bowl and firmly press into the peak, sculpting a neat, wide crater with tall compacted walls to safely contain the liquids.
The Glass Bowl Well
Instead of shaping a messy crater with your fingers, pressing the curved bottom of a glass bowl creates uniform, compacted walls that never leak liquid across your worktop.
The 50% Hydration Well & Seasoning
Pour 100ml of warm water directly into the well — exactly 50% of the flour weight for the authentic Southern bite. Season with 2g fine sea salt and drizzle 5ml extra virgin olive oil right into the center.
Warm Water Activation
Semolina has no yolk fat to soften proteins. Using lukewarm water (~38°C / 100°F) hydrates durum starches significantly faster and accelerates gluten web development.
Fork Emulsion & Bench Scraper Folding
Whisk gently with a fork from the center, pulling thin ribbons of semolina from the inner rim until an emulsion forms. Then switch to your stainless steel bench scraper — chop, fold, and gather all the flour from the perimeter into a moist, shaggy mass.
Chop & Fold Method
Cutting through moist crumbs with a scraper disperses water evenly without gluing sticky dough to your fingers, giving you effortless dough control.
Rhythmic Palm-Heel Kneading on Wood
Gather all crumbles between both palms and press firmly against the wood. Vigorously knead with the heel of your palm, pushing outward, rolling back, and turning 90 degrees for 8–10 minutes until the rough dough transforms into a silky, resilient surface.
Natural Wood Friction
Raw untreated wood grabs the semolina dough, providing the essential micro-friction required to stretch tight durum gluten strings without tearing.
Pirlatura Shaping & Spring-Back Test
Roll the dough between cupped hands in circular motions (pirlatura) against the board to tuck the seam under and form a taut, velvety sphere. Rest the ball and press a thumb firmly into the top: the indentation should spring back gently!
The Spring-Back Check
If the finger indentation springs back within 2 seconds, your gluten network is locked and ready. Wrap airtight in cling film and rest for 30 minutes before rolling.
